Learn To Cook

I believe all wives and mothers should learn to cook for their family.

Don’t worry, many of us have been there.

The disappointment of a tough roast. The horror of a burnt cookie.

Its easy to get down about those type of things when you are trying to do your best.

The fact is, unless you went to culinary school, you probably will have to invest time into learning how to cook. (Actually that’s what culinary school is-investing time and money.)

Once you improve your cooking skills, you will be confident enough to cook for special occasions- birthdays, holidays, anniversary’s, dates, or you can just cook comfort food because you want to.

This year for my birthday, I actually wanted to cook. I knew it would be cheaper and I knew it would taste better.

Here are a few tips for you to improve your cooking skills.

Easy Salsa Meatloaf

Hey there! Its time for another recipe.

I found this recipe for salsa meatloaf because my some of my in-laws like to watch the 12pm news. I think their favorite part of it is the Mr. Food Segment. I don’t know how long Mr. Food has been doing that, but its been a long time.

Every once in a while, they will see something that looks really good. So they asked me to look up the recipe, and since they don’t cook much anymore, I figured that I would make it for them.

Easy Salsa Meatloaf

1 1/2 pounds ground beef
1 egg
1 cup chunky salsa
1 cup coarsely crushed tortilla chips
1 cup shredded cheddar cheese, divided
1 teaspoon chili powder
1/2 teaspoon cumin

Preheat oven to 350. Mix ground beef, egg, salsa, tortilla chips, 1/2 cup cheese, and spices well. Put into loaf form using a bread pan or 9×13 pan.

Bake 55-60 till internal temp is 160 degrees. Sprinkle remaining cheese over meatloaf, bake additional 2 minutes till cheese is melted.

Take out of the oven and let cool 5-10 minutes.

This meatloaf recipe is very easy and tasty. If you have taco seasoning, you could easily use that as a substitute for the chili powder and cumin.

Simple Beef and Vegetable Dish

I really love to make simple, easy, home cooked meals. My family loves it too.

The great thing is whenever someone in your family has an allergy or special diet preference, its easy to substitute whatever you need.

For a long time my husband and I ate low-carb, high protein. The end result was that he lost weight, but I lost too much weight.

For the past year now, I have been trying to gain weight, (how many people have you ever heard say that?) but I don’t want to sabotage my husbands efforts of trying to be fit.

Now I try to balance out low carb meals with more home-style “regular” meals.

Tonight I made this low carb beef and vegetable dish for dinner. It doesn’t look pretty, but it is very easy and very tasty.

Beef and Vegetable Dish

1.5 lb. ground beef, cooked
1 16 ounce package of frozen veggies (I used winter blend)
1/2 cup mayo
1 cup cheese (I used mozzarella)
seasoning (I used garlic and onion powder)

After you cook the ground beef so that it is no longer pink, then add in the mayo, cheese and seasoning. Mix well.
Get out a 9 x 13 baking dish, and lay the frozen vegetables in it, then put your beef and cheese mixture on top of it and mix slightly.
Bake at 350 for about 30 minutes till it is bubbly hot.

I have used frozen broccoli, cheddar cheese, and dry onion soup mix with good results too.

As you can see, this recipe can be adapted to suit your needs, and it takes less then an hour to get on the table.

Sweet and Sour Cucumbers

Do you have cucumbers that you need to quickly use up?

As our garden is coming to an end, I found a few cucumbers that I wanted to quickly and easily use up.
If I have a lot of them, I will can them, but I did not feel like doing that this time.

Homemade relish is delicious but I wanted something that I didn’t have to worry about.

Then I thought of my grandmas recipe for cucumbers she would make us on Sundays for dinner. I looked through the recipes she gave me a couple years ago and found it. It takes less then 10 minutes from start to finish.

This is a great cool side to go along with your meal.

Gma’s Sweet and Sour Cucumbers

2 cucumbers, (1lb) peeled and sliced
1/2 c white vinegar
1/4 c sugar
2 tsp parsley flakes
1/2 tsp salt
1/4 c water

After peeling and slicing the cucumbers, mix ingredients together. Cover and refrigerate 1 hour.
